tours of large wineries and meetings with small wine producers take you

There are 2 major approaches to wine tasting: the
serious, concentrated effort which involves a lot of tongue twirling and
spitting, and then, there is the approach we favor. |

It consists in sharing a pitcher of the
unassuming great little local wine over a simple but delightful lunch,
then enjoying a touch of wine here and there with your newly found friends
somewhere in a wine cellar, at the terrace of a quaint cafe or at a wine
festival and keeping the best for last in the evening when you sip a Muscat
or a Limoux sparkling wine for an apéritif, before opening that special
bottle of Saint Chinian to accompany your gourmet dinner at the Château.
